Great food starts long before it reaches the kitchen.

Every memorable meal begins with exceptional ingredients.

Since the early 2000’s, we’ve built relationships with farmers, growers, fishermen and producers who share our passion for quality. They know the standards we work to, and we trust them to provide the very best produce each season has to offer.

Seasonal
First

Our menus evolve throughout the year, celebrating produce at its very best rather than expecting the seasons to fit around us.

Asparagus signals the arrival of spring. Tomatoes reach their peak in summer. Game arrives with autumn. Every menu reflects what’s growing, what’s thriving and what tastes exceptional at that moment.

Working with the seasons not only creates better flavour, but it keeps our menus fresh, exciting and rooted in the natural rhythm of British produce.

Sustainably
Sourced

Whenever possible, we source responsibly, making considered choices that respect both the ingredients and the environment.

That means choosing hand-dived scallops over dredged, avoiding farmed salmon and working with suppliers who care as deeply about provenance as we do.

We simply believe that when ingredients are treated with care from the very beginning, they produce better food on the plate.

Local
Relationships

Over decades working in kitchens across the Cotswolds, Dan has built long-standing relationships with local growers, farmers and producers who understand the standards Enoki expects.

Those relationships give us access to incredible ingredients, but they also create trust. We know where our food comes from, how it’s been grown and who has cared for it before it reaches our kitchen.

Royal Wootton Bassett JKG Butchers

Exceptional meat begins with exceptional butchery.

That’s why we work with JKG Butchers, a family-run business that shares our uncompromising approach to quality, provenance and craftsmanship. Their carefully selected cuts are sourced exclusively from trusted UK farms, with full traceability from field to fork, giving us complete confidence in every piece of meat that reaches our kitchen.

From beautifully dry-aged beef to carefully prepared seasonal cuts, JKG’s commitment to traditional butchery allows the quality of the produce to speak for itself.

Wing of St Mawes The Cornish Fishmonger

When it comes to seafood, freshness and provenance are everything.

That’s why we source some of our finest seafood from The Cornish Fishmonger, a family-run business with over 40 years of experience and long-standing relationships with Cornish fishermen. Their commitment to responsibly sourced, seasonal seafood mirrors our own belief that exceptional ingredients should always come first. Wherever possible, they work with small day boats and sustainable fishing methods, ensuring every catch is selected with care and respect for the sea.

For Enoki, two ingredients perfectly capture that philosophy.

Our Cornish hand-dived scallops are carefully collected by divers rather than dredged from the seabed, a low-impact method that protects delicate marine habitats while producing beautifully sweet, pristine scallops with exceptional flavour.

We also proudly serve Cornish Bluefin tuna during the season. Sustainably caught using traditional hook-and-line methods by a small fleet of licensed Cornish fishermen, it’s an extraordinary ingredient with remarkable depth of flavour and impeccable provenance.

Bath The Fine Cheese Co.

A great cheese course deserves the same attention as every other course.

That’s why we work with The Fine Cheese Co. in Bath, a family-owned, fiercely independent cheesemonger that has spent more than three decades championing artisan cheesemakers from across Britain and Europe. Their philosophy is refreshingly simple: seek out exceptional cheese, mature it to perfection and never compromise on quality. It’s a philosophy we share wholeheartedly.

Rather than filling shelves with familiar supermarket favourites, The Fine Cheese Co. carefully selects traditionally made cheeses from independent producers, many of which you’ll rarely find on the high street. Their expertise in maturing and caring for each cheese ensures everyone reaches us at its very best, ready to take its place on the table.

Menus Made for the Occasion

You won’t find a set menu on our website. That’s intentional.

Every Enoki experience starts with a conversation. We want to understand the occasion, the people around the table and how you want it to feel before we start talking about what’s on the plate.

From there, we’ll create a menu around you—bringing together your ideas with our experience, the best of the season and ingredients we’re excited to cook with. We can share sample menus for inspiration, but they’re always a starting point, never a formula.

Our food is rooted in classical technique but never restricted by it. It can be refined or relaxed, cooked over fire or delicately plated, familiar or unexpected. What doesn’t change is our approach: exceptional produce, bold flavour and food that’s right for the moment.
